Dairy-Free Puffins: Even The Kids LOVE Them!
On Sunday mornings we love to make pancakes, but last night as I was reading (and drooling) over Bakerella's website I found a recipe for Puffins (mini pancake muffins). I thought it would be a really quick alternative to making pankcakes. She offered a recipe (with dairy) from scratch which I am sure is great, but who has the time?! Not me. So I decided to make it as easy as possible AND dairy-free so I could eat it as well.
Here is what you will need:
-Bisquick mix (this particular brand is dairy-free)
-2 or 3 mini muffin pans (will make about 3 dozen)
-2 eggs
-Soymilk (or rice milk, but better texture with soy)
-Chocolate chips (Trader Joe's brand is naturally dairy-free, and taste like the real thing)
-Cooking spray for the muffin tray
Recipe:
-preheat oven to 350 degrees
-mix 2 cups Bisquick mix with 2 eggs and 1 cup soy milk (mix until blended)
-spray muffin trays well
-pour batter into tray, fill cavities about 2/3 full
-drop in 3 chocolate chips into each muffin
-bake at 350 for about 9 minutes
-remove from oven and cut around edges
-serve hot with a small bowl of syrup for dipping and ENJOY!
